It is becoming more and more usual to find in modern society people who suffer from celiac disease, that is to say, permanent gluten intolerance which produces, in subjects who are genetically predisposed, serious damage in the small intestine's mucus, which becomes the mitigating factor of a series of symptoms.
In response to this illness and its sufferers, supermarkets and large companies offer gluten free produce in the food range which contains it. Consequently, prices have increased dramatically, even reaching exorbitant prices.
Another problem that people with this illness or their relatives may find is the little amount of knowledge about the existing alternatives offered by current experts in cookery. If we put these alternatives at the service of celiac sufferers, it may help us to create and make a rich diet without restrictions and having, thus, a base that serves us as a mainstay for creating our own gastronomic offer adapted to our pace of life.
